To kick off the Christmas Holiday season I am going to blog about cookies. Yes, cookies. For the next 25 days I will feature at least one cookie recipe a day on my blog. There will be all types of cookies for you to try, sugar, chocolate, sprinkles and maybe a few surprises in there as well.
I want you to have fun with these cookies, feel free to add a little extra into some of the recipes too. Put on your ‘baking caps’ and get ready for ’25 Days of Cookies!’
To start off the month I am going with a very simple but festive cookie. A twitter friend of mine Rae Lewis Thornton (@raelt) asked me for a cookie for her Tree trimming. Rae is such a wonderful person. She truly is a ‘Diva living with AIDS’ She said wanted something, quick but festive. I thought of ‘Snowballs’!! Yes, they really do look like snowballs so enjoy! In honor of World AIDS Day I am picking Snowballs as the cookie of the day. Please check out Rae’s blog. She is very up front and honest about the disease!!
- 1 cup butter
- 1/2 cup white sugar
- 1 tablespoon vanilla extract
- 2 cups sifted all-purpose flour
- 3/4 teaspoon salt
- 1 cup chopped pecans
- 3/4 cup sifted confectioners’ sugar
- Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
- Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners’ sugar and roll the dough into 1 inch balls.

December 6, 2010 at 1:42 amI love these! My aunt makes these & she calls them butter balls. I’m assuming it’s because she adds butter to hers.
