Foodie Friday: Shepherd’s Pie

So growing up and spending a lot of time at the Boy & Girls Club I learned a lot about cooking, being in the kitchen and cooking some of my favorite meals. Now this one is a meal that still to this day my grandmother can’t figure out why I like it so much…but I do! It’s Shepherd’s Pie!!!

Something about the ground beef, corn and mashed potatoes that just makes it so good. I don’t know what it is but Mama Morgan used to make this all the time for us kids and we loved it, always asking for seconds. She always served it with a side of mixed vegetables. So I decided to just add the vegetables right into the meal itself.

Shepherd’s Pie

1lb. seasoned ground beef (use your favorite seasoning, i.e Lawry’s, Adobo, etc)

2 cups hot mashed potatoes

4oz. (1/2 of 8-oz. pkg.) Cream Cheese, cubed

1 cup Shredded Cheddar Cheese, divided

2 cloves garlic, minced

4 cups frozen mixed vegetables, thawed
1 cup beef gravy or broth
1. Heat oven to 375.
2. Season and brown meat in large skillet; drain.
3. Combine potatoes, cream cheese, 1/2 cup Cheddar and garlic in a bowl until well blended.
4. Mix together  meat, vegetables and gravy or broth; spoon into 9-inch square baking dish.
5. Pour potato mixture and remaining Cheddar Cheese. Bake 20 min. or until heated through.

There are many different variations of this dish. I’ll be sure to share recipes from others and some of my own as I make them.
