Foodie Friday: Salad Ideas

Good Day Foodies!! Hope you all had a marvelous week. It’s time for Foodie Friday’s. This week we will be taking a look at a few options for making a salad. This will not be the only post on salads but rather a start of a complete series of posts on different salad options. This series will run for the next few months.

Salads don’t just begin with lettuce, but pasta, spinach, fruit or even cheese. What types of items do you like in your salad? If I’m having a salad with lettuce, I’ll usually make a bed of spring mix and add some arugula and spinach, along with shredded carrots, mandarin oranges, dried cranberries, golden raisins, pecans, cucumbers, and avocados. For a dressing sometimes I’ll drizzle honey mustard, ranch, strawberry vinaigrette or an Asian peanut dressing. It all depends on what my taste buds are craving.




Chicken Salad with Grapes & Pecans

Chicken Salad with Grapes Recipe

1/2 cup of mayonnaise or ranch dressing
1 tablespoon fresh lemon juice
2 pounds skinned and boned chicken breasts, cooked and chopped
3 cups red and white seedless grapes, halved
1 cup chopped pecans, toasted

Combine all ingredients except pecans. Cover and store chill in refrigerator for at least 1 hour. Add pecans when ready to serve.

Quick Chef Salad:

Shredded Cheese
Cherry Tomatoes
Ham
Romaine Lettuce

Mix together and add your favorite dressing

Apple Pecan Gorgonzola Salad

2 Granny Smith apples, sliced
2 Tbsp. toasted Chopped Pecans
2 Tbsp. Crumbled Gorgonzola Cheese
1/2 cup Italian Dressing Mix, prepared with balsamic vinegar
Arrange apples slice on a plate in a circle. Sprinkle with pecans and cheese. Drizzle dressing on top.
Other Quick Salad Ideas:
Tomato & Peaches: Mix wedges of tomatoes and peaches, add slivers of red onion, a few red-pepper flakes and cilantro. Dress with olive oil and lime or lemon juice.
Carrots & Blueberries:  Grate carrots, toast some sunflower seeds, and toss with blueberries, olive oil, lemon juice and plenty of black pepper. Sweet, sour, crunchy, soft.
Red Salad: Combine tomato wedges with halved strawberries, basil leaves, shaved Parmesan and balsamic vinegar.
5-Bean Salad:  Chickpeas, cannelloni or other white beans, kidney or other red beans, steamed string beans and steamed yellow wax beans. Toss with vinaigrette, chopped scallions or red onion, and parsley.
Warm Potato Salad: Boil bite-size red potatoes. While still warm, dress them with olive oil, lemon juice, whole grain mustard, capers and parsley. Chopped shallots, bell peppers, etc.
Watermelon & Feta:  combine with roughly chopped mint, crumbled feta, sliced red onion and chopped Kalamata olives. Dress lightly with olive oil and lemon juice.You may need to add salt.
 
Walnut & Blue Cheese: Toss mixed greens with walnuts, blue cheese and raspberries; drizzle with a simple vinaigrette.
Smoked Salmon & Avocado:  Mix watercress with chopped smoked salmon, avocado, red onion and capers. Make a vinaigrette with olive oil, sherry vinegar and mustard powder.
Little Italy:  Chop or julienne salami and prosciutto, then toss with cubed mozzarella, chopped tomato, pepperoncini, oil and wine vinegar.
Thai & Sesame Noodles:  Combine about a half-cup peanut butter with a tablespoon soy sauce and enough coconut milk to make the mixture creamy (about a half cup), along with garlic and chili flakes in a blender or food processor. Toss sauce with cooked and cooled noodles, a load of mint, Thai basil, and/or cilantro, and lime juice. Shredded cucumber and carrots optional.

Taste Test Tuesday: Va Va Veggie! Cheese Ball Mix

What are your taste buds ready for today? We’re talking about veggies today. Our taste buds had the opportunity to experience Tastefully Simple’s Va Va Veggie Cheese Ball Mix.

This cheese ball mix is a part of Tastefully Simple’s Spring & Summer line. A combination onions, green and red peppers, tomatoes and garlic, gives this cheese ball a very mild flavor.

Mix with cream cheese, chill for 2 hours and enjoy with other vegetables or crackers.

Va Va Veggie Cheese Ball Mix also works well as a sauce using heavy cream to mix in with some pasta.

Combine ground beef, turkey or even chicken with Va Va Veggie Cheese Ball Mix to create a flavorful burger.

Try seasoning vegetables or poultry with Va Va Veggie Cheese Ball Mix before adding them to grill for cooking.

We enjoyed Va Va Veggie Cheese Ball Mix. Such a great item for spring and summer hang outs or even just for spending time with family.

Taste Test Tuesday: Dried Tomato and Garlic Pesto

Tastefully Simple has some really great products that you can use at any time. The versatility of each of the items makes cooking a simple yet fun and creative experience.

Dried Tomato & Garlic Pesto seasoning is one item from their Standard line that is available year round. This is great if you want to make your own pesto, season your pasta sauce or even just your everyday meats and veggies.

Taste Test Tuesday: Wildtree Hearty Spaghetti Sauce Blend

Happy Tuesday Everyone!! The summer is here and it’s been a hot one so far. For the month of July we will be showcasing products from a direct sales company called WildTree. Each week we will bring you a product from their line. Our independent consultant is Miss Tiara Rosemond from Columbia, South Carolina. She will be with us through out the month as we discuss this line of organic products.

Hearty Spaghetti Sauce Blend

This is a great idea if you are looking to expand your palate with your spaghetti sauce, have certain dietary restrictions, or just want a healthier choice in your food selection. It also helps cut down on the sodium intake.  Just a small portion of the seasoning blend added to a can of crushed tomatoes, cook for 20 minutes and you have a delicious sauce. You can also add your own onions, mushrooms, peppers, veggies and meat to it for a quick meal.

Made with basil, oregano, garlic, parsley, corn oil, carrots, celery and red wine. This sauce blend is great for making meatloaf, mixing with olive oil as a dip for crusty french bread, lasagna, stuffed shells and more.

The sauce blend comes in a 2oz. jar for $8.00, and also in a 16oz. jar for $16.00.

Foodie Friday: Quick Lunches

As we all know there is not much time in the morning to pick out something for lunch. There is barely enough time in the evening to fix dinner, never mind trying to create something for lunch too. For those of us that don’t always have left overs available for lunch the next day, here are some ideas for you.

1. Chicken Salad sandwich –  Mix together chopped leftover chicken, mayo or your favorite salad dressing, celery, pickles or relish. Maybe a few chopped onions, grapes or some nuts for a crunch. Place is on a croissant, sandwich bread, in a pita, on flat bread, etc.

2. Pasta Salad – cooked pasta, veggies, cheese (shredded or cubed), add in some Italian dressing or try tuna and mayo. Enjoy with cracks, or pita bread.

3. Peanut Butter and Jelly/Fluff – Yes, that’s right I said Fluff. Remember that gooey Marshmallow goodness. Crunchy or Creamy Peanut Butter with some jelly (grape, strawberry, mixed fruit) always brings you back to your childhood.

4. Quesadillas – Flour tortillas, with shredded cheddar, pepper jack, or mozzarella cheese, left over chicken or steak. Make the quesadilla then put it in the microwave for 30 seconds on High and you have your lunch. Pair it with some salsa and sour cream on the side.

5. Chili & Cornbread – Got cornbread left from Sunday dinner? Grab a slice to accompany a can of chili. Sprinkle some shredded cheese, chopped onions or sour cream on top.

6. Cesar salad Pockets – Grab a bag of Cesar salad mix. Make the salad then stuff it inside a pita pocket.

7. Turkey Roll-Ups – Spread mayo, salad dressing or cream cheese on the tortilla, add turkey then roll up and enjoy. You can switch out the turkey for another meat or just veggies.

8. Deli Plate – Grab some grapes, slices of cheese (or cubed), crackers, slices of chicken, turkey or ham, celery and carrots. Cream cheese, ranch dressing, and peanut butter make great dipping sauces.

9. Fruit Salad & Yogurt – Strawberries, blueberries, honey dew melon, cantaloupe, grapes, mangoes, oranges, etc. Pair that with a cup of yogurt, add some nuts or granola for a healthy treat.

10. Open-Faced Sandwich – bagels or english muffins topped with cream cheese, smoked salmon, turkey, ham, roast beef; hummus topped with spinach leaves and cucumbers; tomato sauce, mozzarella cheese, and pepperoni, heat in microwave until cheese melts and you have pizza.
