Foodie Friday: 4-Ingredient Carnitas Posole

We’re back today with another Foodie Friday post. This time it features a cookbook. I love when I get to support my friends in their dreams. A blogger friend of mine, Shelby form Diabetic Foodie has created a diabetic friendly cookbook for electric pressure cookers.

The Diabetic Cookbook for Electric Pressure Cookers: Instant Healthy Meals for Managing Diabetes

Browsing through this cookbook made me want to cook so many things. The recipes are easy, the pictures make the food look delicious and you can cook everything in an electric pressure cooker.

4-Ingredient Carnitas Posole

4-Ingredient Carnitas Posole

  • 2 cups Chicken Bone Broth (page 117) or low-sodium store bought chicken broth
  • 1 15oz can hominy
  • 2 cups Pork Carnitas page 94) or shredded cooked pork
  • 2 cups Roasted Tomatillo Salsa (page 121) (You can use a jar (16oz) of store bought salsa verde)
  • Chopped avocado, for serving (optional)
  • Chopped cilantro, for garnish (optional)
  1. In the electric pressure cooker, combine the broth, hominy and it’s juices, pork, and salsa. Stir to combine. 

  2. Close and lock the lid of the pressure cooker. Set the valve to sealing. 

  3. Cook on high pressure for 8 minutes. 

  4. When the cooking is complete, hit Cancel and quick release the pressure. 

  5. Once the pin drops, unlock and remove the lid. 

  6. Spoon into bowls and serve with avocado and/cilantro (if using).

This cold weather we’ve been having in Hampton Roads, VA calls for some soup and this Carnitas Posole is the perfect fit. Quick and easy meal, made from leftovers, gotta love it. There are few other recipes in this book that I want to try, the first two being: Crust-less Key Lime Cheesecake and Firecracker Chicken Meatballs (these could be a great game-day appetizer or meal)

I’m not a diabetic but these are some healthy meals to check out. There are a variety of gluten-free and vegan options available. I am adding this cookbook to our kitchen bookshelf.

Happy New Year Family!


Happy New Year Everyone! We hope you all had a wonderful time with your loved ones over the holidays. We took some time to go visit family and friends in the Northeast region. We had a great time with our loved ones. Christmas breakfast was definitely a highlight of the trip. Lots of food, laughs and love flowing through out the house.

It’s a new year and we know many of you have made resolutions for the new year and others are going back to their regular scheduled food regimens that began before Thanksgiving. If you are starting a new healthy eating challenge or continuing on the one you started before the holidays, we will have some blog posts coming up that will help you with your meal options.

Be on the look out for some new things coming this year with Southern Roots Kitchen. You the readers requested some additional topics to be discussed on the blog and we will bring them to you. We’re not getting rid of anything, just adding some more variety to the blog. We appreciate all the feedback that you provide and we welcome you to reach out and send us more.

Food Event: The Metropolitan Cooking and Entertainment Show is coming to DC!

As you know, we love food here at Southern Roots Kitchen. Our owner Kimberlee has been granted the opportunity to attended an event for food lovers in Washington D.C. She will be covering The Metropolitan Cooking and Entertainment Show Saturday November 3rd and Sunday November 4th. This two day event is filled with tastings, workshops, book signings, hundreds of exhibitors and appearances by Food Network celebrities.

Celebrity Theatre is a 3,000+ seating area where celebrities will hold a live cooking event that will last about an hour. Tickets to the Celebrity Theatre include an all day admission to the exhibitor hall for that day. Local and regional chefs will take the stage at the Food Lion Cooking Stage. Featured celebrity guests for this event will be, Jacques Pepin and his daughter Claudine, Gail Simmons, Giada De Laurentiis, Carla Hall, Michael Symon, Tom Colicchio, and Jeff Mauro

This is an event for people of all ages and you will find something for all the foodies in your life. Head to a tasting or even a workshop sponsored by Lindt Chocolate. It’s also a shopping show, so you get to pick out some food items as well. Need a bottle of wine, some more jam or maybe some chocolate? Metro Cooking DC is the place to be.

Tickets are on sale now, you can contact Kimberlee if you would like to purchase tickets to the event. General Admission is $24.50 (children 4-12 are $12.50, under 4 are FREE) and gets you into the exhibitor hall with over 400 vendors, cooking demos by regional chefs and tastings. Other packages include meet and greets with Food Network chefs, presentations in Celebrity Theatre, cookbook signings and more.
